Rachael Rae, watch out. This Sunday night “redemption snack” was done in under 15 minutes. (Let’s just say dinner wasn’t the best. But I wasn’t the one who cooked, either!) I am still trying to figure a clever name for this recipe. Help!
Recipe:
Chicken Salad
1 Left Over Baked chicken breast (haphazardly torn off of bird and chopped/shredded. By the way, the chicken was baked two nights ago with lemon, tarragon and garlic.)
1 Handful dried cranberries
1 Sliced Green Onion
1 Chopped Celery Stalk
3 tbs miracle whip
1/2 tsp dijon mustard
Lemon juice
dash white pepper
dash nutmeg
Sliced Rosemary artisan french ring (Bread)
Mix Chicken salad ingredients together and heap spoonfuls onto your bread slices. Sprinkle paprika for color, garnish with parsley sprig.
